Italian Cream Cake

 Who loves cake here? EVERYONE!!!! If you don't then there's something wrong with you but you can say there's something wrong with me because I hate pie. Enough chit-chat lets get down to our Italian cream cake!!!

1 cup of buttermilk.  5 eggs.  1 stick of oleo or 1/2 cup of shortening.  2 cups sifted flour.  1 cup chopped pecans.  1 teaspoon soda ( mostly coke-a-cola).  2 cups of sugar.  1/2 teaspoon of vanilla.  1 small can of coconut.

preheat oven to 325 degrees.  Combine soda and milk.  Let stand just a FEW minutes.  Beat egg whites until stiff with cream, sugar, and shortening, then add egg yolks one at a time.  add buttermilk and flour, fold in egg whites, then add coconut and nuts. Bake in 3-9 inch pan for about 25-35 minutes or until done. Frosting: 8 OZ cream cheese, i soft stick of oleo, 1 box of powdered sugar, and 1/2 teaspoon of vanilla. you can freeze the cake.
